Hi Sims,

Fresh sea urchin roe is mostly available in Summer however if the weather is fine and the sea is calm you should find it in local fishmongers even at this time of year.

As for the recipe it’s quite simple: you need a tub of fresh sea urchin roe; a couple of fresh tomatoes deseeded and peeled and some fresh parsley. You boil the pasta, drain it and add this mixture to it. Season with some fresh pepper and enjoy its unique taste!

Olivia & Karl,

I have a special request, I hope you can help me with this.

Do you have advice for pasta with sea urchin roe for me? Cooking it but also time of year. I’ve had it in Sicily but not sought fresh roe in Malta before.

I’d like to know the months that fresh from the sea urchin roe is available here. Fresh roe much surely be available here in Gozo where I live – but what months? Is it both Spring and Fall?
